Ripasso di Secondo Marco is a robust and intense Valpolicella. It undergoes aging in barrels of varying sizes for a minimum of 12 months. Its aroma profile features an interplay of black cherry, blackberry, and plum notes, interspersed with subtle hints of tobacco and cinnamon. On the palate, it offers a warm and well - balanced experience, with a smooth, silky tannic texture.
This Valpolicella Classico Superiore Ripasso is crafted by the Secondo Marco winery. The blend is led by Corvina, which constitutes 60% of the mix, along with Corvinone, Rondinella, Oseleta, Coratina, and Pipiona. These grape varieties are sourced from vineyards near Fumane di Valpolicella, where they are cultivated using the pergoletta system.
The must ferments on the grape skins for two weeks. Subsequently, it undergoes a second fermentation by being "passed over" the Amarone pomace. After that, the wine is refined for 12 months in 50 - hectoliter barrels. The maturation process then continues in smaller barrels, each with a capacity of just 7 hectoliters. Once this period concludes, the wine is ready for bottling.
