This remarkable wine is made from the Nebbiolo grape, cultivated in the communes of Serralunga and La Morra. It undergoes a 3-week fermentation in steel vats, followed by 12 months in barriques and 18 months in large oak casks. The result is impressive, offering sumptuous aromas of black cherries, raspberries, leather, spices, and licorice, interwoven with floral, mineral, and vanilla notes. This complexity carries through to the palate, combining a firm yet velvety structure with great elegance. Decant for an hour and serve at 17 °C. Remarkable when paired with grilled lamb chops, braised veal cheeks, venison medallions, osso buco, roasted quails, or roast duck.
