Billecart-Salmon Le Sous Bois represents a bold evolution in the house's portfolio—renamed from "Brut Sous Bois" to simply "Le Sous Bois" to emphasize its uniqueness as the estate's only entirely oak-fermented cuvée. Since 1818, Billecart-Salmon has remained family-owned for seven generations, mastering the art of blending with ancestral savoir-faire.
The Art of Oak Vinification
Composed equally of Chardonnay, Pinot Noir, and Meunier from Grand Cru and Premier Cru sites across Montagne de Reims, Côte des Blancs, and Vallée de la Marne, this champagne is entirely barrel-fermented with 30-35% reserve wines. Extended lees aging for 6-7 years and minimal dosage (around 5g/L) create depth and complexity while preserving finesse.
Complex, Autumnal Character with 93 Points
"Delicate, toasty bouquet of mirabelle, tangerine, white fruits, and baked bread mingled with vanilla pod". The palate reveals baked apple, stone fruits, flaky pastry, brown butter, and gentle spices—perfectly balanced richness with tangy acidity and creamy texture.
