The uniqueness of Ca' d'Gal stems from its exceptional approach to both cultivation and winemaking. Alessandro Boido, the driving force behind the winery, has a distinctive perspective on Moscato that sets it apart from the rest. While many wineries focus on maximizing their vineyard output, Ca' d'Gal opts for a more restrained production strategy to prioritize quality. Even their entry-level Moscato d'Asti Lumine boasts an average yield of just 40 hl/ha, comparable to the esteemed vineyards of Champagne and Burgundy.

Timing the harvest is another critical aspect for Boido. While numerous wineries chase higher yields by harvesting grapes that are still yellow-green to maintain acidity, he embraces a more traditional method reminiscent of the German late-harvest style, allowing the grapes to achieve full ripeness on the vine before they are carefully hand-picked.

Boido's goal is straightforward: to honor Moscato with the same level of respect afforded to the most prestigious grape varieties. This guiding principle has allowed the 150-year-old winery to craft some of the most sought-after and highly regarded Moscato d'Asti in the world.
