André Beaufort à Polisy Brut Réserve is a distinctive organic Champagne from the pioneering Beaufort family, who have practiced biodynamic viticulture since 1971. This grower Champagne hails from Polisy in the Côte des Bar, 40 kilometers southeast of Troyes, where clay-rich Kimmeridgian soils under Burgundian influence create wines of exceptional finesse, tension, and frank acidity. The blend comprises 80% Pinot Noir and 20% Chardonnay at 12% alcohol with 9g/l dosage.
Organic Viticulture & Indigenous Fermentation
Grown without synthetic chemicals since 1971, the Beaufort family uses essential oils and homeopathic treatments instead of copper or sulfur. Fermented with indigenous yeasts and aged nearly a year in older barrels before extended lees aging.
Yellow Fruit & Herbal Freshness
The pale straw-yellow color opens to aromas of yellow fruit, herbal notes reminiscent of mint and fennel, with hints of pastry. Deep and powerful on the nose, the palate is creamy, fresh, and mineral with vibrant acidity and elegant persistence. The clay soils impart distinctive aromatic complexity to the Pinot Noir and Chardonnay.
