Chablis' Organic Radical: 34-Month Élevage, Zero Herbicides

Domaine Pattes Loup represents the visionary work of Thomas Pico, one of Chablis' most talented and dynamic growers who launched his own label in 2006 from just 2.5 hectares inherited from his grandfather. Today, the estate spans 22 hectares of certified biodynamic vineyards in Courgis and Préhy, farmed with agroforestry and zero herbicides—a radical departure in a region where 95% still rely on chemicals.

Thomas employs extended élevage that sets his wines apart: village Chablis ages 18 months minimum, while premier crus rest for an extraordinary 34 months before release. All wines are hand-harvested, fermented with native yeasts in concrete eggs and stainless steel, then bottled unfined and unfiltered with minimal SO2.

Critics hail Thomas as "one of the most exciting and visionary vignerons in all of France," producing Chablis of remarkable mineral precision, transparency, and age-worthiness—pure expressions that honor his grandfather's legacy while redefining the appellation's potential.
