Brut Eulalie is a blend of predominantly Pinot Noir from four parcels of old vines located on the upper slopes of the estate and Chardonnay from the locality of "L'épicea". About a quarter of the wines are fermented and aged in Burgundian demi-muids, the rest in stainless steel tanks.
