This 2018 Dom Pérignon is a vintage champagne blending 54% Chardonnay and 46% Pinot Noir. It rests on its yeast sediment for at least eight years, which adds a creamy texture and gentle toasty depth. It tastes bright and fresh, with lemon, white flowers, apple and a touch of ginger, finishing long and mineral.
The 2018 is Vincent Chaperon's first vintage as Dom Pérignon's cellar master. A warm, sunny growing season gave ripe fruit, yet the wine feels fresh, mineral and a little salty. It's lovely now with oysters or scallops, and should keep gaining depth with age.
