Biodynamic in nature, the Pouilly-Fumé Prédilection is sourced from a steep, terraced vineyard of Kimmeridgian marl planted by Didier Pabiot, featuring old vines averaging 50 years in age. With over 70% active lime, the low-yielding vines produce only 28 hl/ha, resulting in a saltier and more refined style compared to the Aubaine. The 2019 vintage exhibits remarkable purity and focus on the mid-palate, showcasing a silky texture and a long finish marked by a delicate saline note. This wine offers high concentration, vibrant acidity, and excellent harmony.
