Crystallum Peter Max Pinot Noir 2025 is a five-vineyard Pinot Noir blend from Hemel-en-Aarde, Elandskloof and the Overberg, fermented naturally with 50% whole clusters to build tension and lift. The 2025 is a lively, taut vintage, driven by crunchy acidity rather than weight.
Cranberry and pomegranate open the nose, followed by sour cherry, rhubarb and tomato leaf, with riper mulberry and black cherry filling out the mid-palate. Dry, grippy tannins give the finish structure - a South Africa Pinot Noir built for freshness and precision rather than power.
