This Savigny-lès-Beaune, made from old vines, is the result of a subtle blend of three distinct plots: the first, nestling at the bottom of the hill (Les Saucours), the second halfway up the slope (Les Gollardes), and the last at the top of the hill (Les Goudelettes). This harmony of origins favours an ideal expression, characteristic of Savigny-lès-Beaune wines, distinguished by delicate finesse and subtle bitter and mineral tension.
To bring this cuvée to life, the estate has opted for a meticulous 12-month ageing period in casks, with a proportion of 10-15% new casks, followed by six months in vats. This stage gives the wine added tension and subtle balance. Tasting reveals a single-varietal Chardonnay that releases aromas of lemon, brioche and citrus fruit. Remarkably elegant, with a striking minerality, it goes well with delicate dishes such as carrot gratin. Served at a temperature of around 11 degrees, this wine can also benefit from a little ageing to reveal more complexity over time.
