Rated 94 by James Suckling, the Guiborat 'De Caurés à Mont-Aigü' Blanc de Blancs Extra Brut 2015 is a masterpiece of Côte des Blancs precision from Richard and Karine Fouquet — a single-vintage Champagne blending two iconic Cramant Grand Cru parcels: the chalky limestone expanse of Mont-Aigü, and Les Caurés, planted with ancient Chardonnay vines dating to 1945.
Hand-harvested, first-pressing juice only, 91% stainless steel and 9% old 400L oak, aged 6 months on fine lees before 46 months on lees after bottling — zero dosage, disgorged December 2020. The nose is luminous and pure — white flowers, ripe citrus, green apple and warm brioche with a saline, chalky undercurrent. The palate is racy, seamless and fleshy — crystalline acidity, crushed chalk and a long, persistent mineral finish. Cellar to 2038.
