Product Description
Jean-Paul Hébrart personally selects ten old-vine lieux-dits from Mareuil-sur-Aÿ premier cru — including Faubourg d'Enfer and Croix Blanche — blending 80% Pinot Noir with 20% Chardonnay from 50+ year-old massal-selection vines. Fermented in stainless steel, aged 42 months on lees, this champagne is the pure, undiluted expression of Mareuil-sur-Aÿ's celebrated chalk terroir.
- Nose: Noble Pinot Noir fragrance — mirabelle, cherry blossom, orange citrus, and shortbread with a reductive, toasty edge of remarkable complexity
- Palate: Fleshy and vinous — white peach, red berry, malt, and gingery spice, underpinned by the penetrating chalky minerality that defines Mareuil-sur-Aÿ
- Finish: Gossamer, long, and saline — anise-inflected with lingering chalk, fine mousse, and a weightless concentration that builds and persists beautifully
