Johannes Zillinger's 'Revolution' Pink Solera NV blends Rösler, Syrah and St. Laurent, with St. Laurent aged in a solera system spanning multiple vintages. Rösler ferments whole-bunch and presses directly, Syrah macerates two days before pressing, and St. Laurent rests 12 months in amphora, bottled unfined and unfiltered with minimal sulphur.
Red and dark berries, cherry clafoutis, almond slivers and lavender lead the nose. The palate turns juicy and sensual, with fresh red berry and cherry fruit, subtle yeast notes and a silky texture, finishing palatably crisp.
