Eben Sadie's flagship South Africa white, Palladius is an extraordinary blend of 14 varietals from 17 Swartland vineyards planted between 1900 and 2000. The 2023 introduces 20% coastal limestone fruit for the first time — whole-bunch pressed, fermented in clay amphorae and concrete eggs, then aged 12 months on lees before 12 months in large oak foudre, unfined and unfiltered.
- Nose: Lemon curd, wild thyme, sliced apple, pear, clove, and crushed stone — shy at first, then irresistibly complex after aeration
- Palate: Layered, creamy, and full-bodied — honeyed texture on entry, lime zest, stone fruit, and herbs with saline mineral freshness and nervous acidity
- Finish: Long, salty, and structured — mineral, flinty, and herbaceous; best from 2028, drinking beautifully through 2050
