A Historic Chablis Estate Expressing Two Centuries of Terroir
Domaine Billaud-Simon is one of Chablis’ historic names, founded in 1815 and shaped by generations of the Billaud and Simon families. Now part of Domaine Faiveley, it retains its own identity: focused, terroir-led Chardonnay from exceptional village, Premier Cru and Grand Cru vineyards in northern Burgundy.
The estate’s old vines root deeply in Kimmeridgian limestone, the fossil-rich seabed soils behind Chablis’ hallmark salinity and cool, stony energy. Sustainable vineyard work, close parcel-by-parcel observation and later harvesting prioritise freshness, concentration and natural acidity.
In the cellar, gentle pressing and temperature-controlled stainless-steel fermentation protect purity and precision. Oak is used sparingly—mainly older barrels for selected crus—adding texture without disguising site character. Expect citrus, orchard fruit, white flowers and iodine-like minerality: Burgundy Chardonnay with tension, clarity and serious ageing potential.
