Billecart-Salmon Cuvée Louis Blanc de Blancs 2012 delivers crystalline precision and creamy depth from 100% Grand Cru Chardonnay, with low dosage emphasizing chalky finesse and long aging potential. Aromatics layer candied citrus, pear, hazelnut, and chestnut bread over a saline-mineral core, finishing with almond biscuit, white pepper, and cardamom nuance.
Tasting notes
Pale gold with fine, persistent mousse; the nose shows flowers, hazelnut, chestnut bread, candied mandarin, and limoncello over chalky minerality. The palate is creamy yet taut, revealing almond paste, flaky brioche, white fruits, white pepper, and citrus zest with a long, saline, cardamom-tinged finish.
Winemaking
Chardonnay from Côte des Blancs Grand Crus—Cramant, Chouilly/Oiry, Avize, Mesnil—vinified 75% in tank and 25% in oak; most lots underwent partial or blocked malolactic to preserve tension. Dosage is 3.9 g/L; disgorgement largely in early 2023 after ~12 years on lees.

Named for Louis Salmon, brother of co‑founder Elisabeth, this cuvée channels the house’s historic pursuit of purity and minerality from top Côte des Blancs parcels. Site selection combines finesse, power, structure, and longevity through chalk-rich slopes that drive its signature saline precision.
