David Moret is a unique figure in Burgundy winemaking—unlike many, he didn’t come from a winemaking family. After studying viticulture and oenology, he initially sold winery equipment to local producers, eventually founding his own label as a micro-négociant in 2000 from a small cellar in the heart of Beaune. Specializing solely in white Burgundy, David’s wines are known for their intensity, boldness, and polish, much like his own spirited personality. Often found on top tables in France and England, his wines are a well-kept secret among those in the know. Crafted with precision, David’s wines undergo fermentation in stainless steel with indigenous yeast before aging in French oak barrels (20-25% new, depending on the vintage), followed by malolactic fermentation and natural settling, and are bottled unfined and unfiltered.
