This Loire Sauvignon is sourced from organically farmed old vines planted in pure sand and flint soils (no clay or limestone), creating exceptional crystalline purity. Balanced Tank & Barrel Aging
After hand-harvesting, the wine ferments 80% in stainless steel tanks and 20% in neutral French oak barrels, then ages 6 months across various barrel sizes with malolactic fermentation completed. Racked twice total before unfiltered bottling.
