100% Pinot Meunier Blanc de Noirs. This is a blend from all the Pinot Meunier parcels owned in the village of Lhéry, totaling 2.8 hectares. The soil consists of clay-limestone and sandy soils, with an average vine age of 35 years. It is fermented in stainless steel tanks, with zero dosage. The name "M" stands for Meunier, while "321" refers to the INSEE code (administrative number) for the village of Lhéry, emphasizing that it is made from 100% Pinot Meunier sourced locally.
In aroma and taste, M321 gives us wonderful notes of mandarin, peach, almond and pineapple. The chalky soil, the delicious Meunier grapes, and a low dosage of sugar - yes, in fact this time there is no added sugar at all - give this champagne an exciting expression, so we are treated to a relatively mild and fruity champagne, but with a wonderful acidity and fine bubbles that provide a really nice balance.
