        The vineyards are carefully managed to produce the finest grapes, with buds trimmed and a green harvest implemented to purposefully limit yields. This approach results in an average yield of just 35-38 hl/ha, allowing for a concentration of flavor and quality in every grape.
Harvesting is done exclusively by hand, with rigorous selection occurring right in the vineyard to ensure only the best fruit makes it to the winery. After de-stemming, the grapes are gently pressed using a pneumatic press. The wine then undergoes fermentation for 15-21 days in underground, temperature-controlled, gravity-fed cuves, preserving the integrity of the fruit.
To achieve its signature complexity, the wine is aged for 18 months in oak foudres, allowing it to develop depth and character before being bottled.
