Rated 93 pts (Vinous), Guiborat Téthys Blanc de Blancs Grand Cru Extra Brut NV is the entry-level gateway to one of the Côte des Blancs' most exciting organic grower estates — a 100% Chardonnay blend of Grand Cru parcels in Cramant, Chouilly and Oiry, blended with perpetual reserve wines dating back to 2015 for added depth and complexity.
Fermented in stainless steel to preserve crystalline purity, zero malolactic fermentation, 7 months on lees, then 32+ months on latte — just 2.5g/l dosage. The nose captivates with orange blossom, wet chalk, green apple and crystallised citrus. The palate is tensile, saline and luminous, fine-boned white peach, hazelnut, warm brioche and a long, ascending, chalk-driven finish.
