Jonathan Didier Pabiot Pouilly-Fumé Luminance 2023 is a focused, biodynamic sauvignon blanc from low-yielding Kimmeridgian marl vines. Native-yeast fermentation is followed by 18 months on lees in concrete, bottled unfined and unfiltered for purity and texture.
This Pouilly-Fumé balances power with finesse, layering citrus, green fruit and flinty minerality over a saline, generous finish. Jonathan Pabiot’s fifth-generation approach delivers remarkable energy and clarity.
