Pear, green apple and toasted bread lead the palate of Pierre-Yves Colin-Morey Saint Aubin Village Blanc 2023, with white flowers adding a delicate lift. This Chardonnay is medium to full-bodied and silky, balanced by bright acidity and a long finish with a chalky grip.

In the cellar, PYCM ages its white wines on the lees, the spent yeast left after fermentation without stirring them. This approach allows texture to develop gradually while retaining the wine’s precise, focused style.
