It is well known that Laurent Ponsot does not rely on the use of new oak barrels to add the smell of wine, but to return the most primitive natural role of oak barrels - "so that the wine can follow its own aging cycle and exchange oxygen". The oak barrels used for age insist on using only old oak barrels for more than five years. Although it requires more effort and time, it can bring more subtle changes to the taste.
