Cooler than many Australian regions, with a strong maritime influence, the long, slow ripening season in Geelong, Australia is crucial for developing flavour complexity while retaining acidity. The soil is equally impressive: The foundation is ancient volcanic rock overlaid with rich, red-brown clay and limestone. The presence of limestone is a key factor, as it is in Burgundy, providing excellent drainage and a mineral quality that is a signature of the wines.
