Rated 94 pts by Essi Avellan MW and 90 pts by Vinous, Guiborat Grand Cru 'Prisme' Blanc de Blancs Extra Brut NV is the flagship expression of Richard and Karine Fouquet's organic estate in Cramant — a 100% Chardonnay blend of three iconic Grand Cru parcels: Les Bergeries in Cramant (1984), Les Caurés in Chouilly (1946–2005) and Gros Mont in Oiry (1969).
Aged 7 months on lees in stainless steel, zero malolactic fermentation, then 44 months on latte — just 1.5g/l dosage, as Richard describes, "you experience the wine through the prism of the terroir". The nose is chalky, racy and pristine — warm chalk, citrus zest, dried herbs, mint and white pepper. The palate is razor-sharp and tensile — bright lemon, orchard fruit and brioche with a long, persistent mineral finish. An unmissable grower Champagne.
