This cuvée presents a straw yellow color with glimmers of fool's gold. The nose reveals cardamom, hints of pine and dried thyme, along with marshmallow dust and ripe red fruit. On the palate, it is fresh and bright, showcasing savory notes with subtle hints of ripe red plum skins and orange pith. Juicy acidity leads to a weighty mouthfeel, while dried herbs and cellar must precede an Earl Grey-like tannic presence, culminating in a long, dry finish.
Pair with a roasted endive and blue cheese salad, smoked salmon dip with seedy crackers, or a savory Idiazábal and leek galette.
