Grapes are carefully selected, hand fermented, and the entire winemaking process is conducted in earthen pots buried deep underground, allowing the soil temperature to naturally decrease and dissipate heat. After 20 days of fermentation, the earthen pots are filled and sealed, until March of the following year for pouring and bottling.
