00 Wines was founded in 2015 by Chris and Kathryn Hermann, inspired by Coche-Dury. The winery's guiding philosophy is to explore the limitless potential of Willamette Valley Chardonnay and Pinot Noir, aiming to produce wines with extraordinary texture, intensity, and a sense of place. Why is it called 00? It represents the boundless potential in their wines.

00 Wines is known for meticulous, artisanal techniques that set them apart. They employ the "Black Chardonnay" Method to produce their white wines. Whole grape clusters are deliberately exposed to oxygen before fermentation, which causes the must to turn dark. The technique is designed to extract maximum phenolic compounds from the skins and seeds, aiming to create wines with greater complexity, texture, and long-term resistance to oxidation. For their Pinot Noir, the winery uses an uncommon method of fermenting the grapes in 500L terracotta amphorae imported from Italy. This ancient vessel is chosen to influence the wine's texture and fragrance.
