Nicolas Maillart, a ninth-generation grape grower based in the village of Ecueil in Champagne’s Petite Montagne, follows the proud tradition of Récoltant-Manipulant, cultivating his own grapes exclusively for his Champagnes. His family has deep roots in grape growing, dating back to 1753. Since 2009, Nicolas has focused on reducing the winery’s environmental impact, utilizing self-generated solar energy and achieving HVE (Haute Valeur Environnementale) certification, which emphasizes sustainable practices across the entire estate. Committed to organic and biodynamic methods, he harmonizes his farming with the natural rhythms of the earth.
