Where Sancerre meets minimalist craft
Pascal Jolivet is a visionary Loire Valley winemaker whose name has become synonymous with pure, elegant Sauvignon Blanc. Founded in 1987, his domaine in Sancerre is one of the region's most dynamic, now spanning 120 hectares across Sancerre and Pouilly-Fumé. Jolivet is a pioneer of natural winemaking, believing in letting nature take its course. This philosophy is realised through a "bio vinification" process: indigenous yeasts, no enzymes, and minimal intervention from grape to bottle. He was also among the first in Sancerre to introduce temperature-controlled stainless steel tanks, allowing for precise, cool fermentations that preserve the fruit's pristine character.
