Mitolo Serpico Cabernet Sauvignon 2021 is a formidable McLaren Vale, Australia wine, inspired by Frank Serpico’s rebellious spirit. Hand-harvested Cabernet is dried for six weeks in an Amarone-style appassimento process, then aged in French oak, intensifying flavour while retaining poise.
Winepilot finds a “corridor of Cabernet concentration,” with black fruits, bay leaf, chocolate, cigar box and anise. “Beguiling blend of concentration and freshness,” finishing with silky cassis, red fruit, rose petals and savoury lift.
