Respectful Viticulture

Practicing exceptionally rigorous lutte raisonnée (virtually organic), Nicolas Gauffroy uses zero chemical fertilizers, herbicides, or pesticides in his meticulously hand-harvested vineyards. The 100% Chardonnay ferments with indigenous yeasts in stainless steel before aging 12 months in French oak barrels (15% new) followed by two additional months in tank.
