From biodynamically farmed old vines in the Côte de Beaune, Nicolas Rossignol's Aligoté is a revelation — vinified with minimal intervention to preserve the grape's vibrant natural energy and textural depth. Sourced from two exceptional parcels at the base of Volnay and high in Pommard, this is Aligoté far removed from the ordinary.
Intensely Fresh, Textural & Mineral-Driven
Pale gold in colour, the nose is crisp and inviting — lemon zest, green apple, white flowers, and a distinctive flinty, stony minerality. The palate is surprisingly rich and insistent, with layers of citrus, orchard fruit, and saline freshness carrying through to a long, energetic finish. Perfect as an aperitif or alongside oysters, grilled fish, and soft cheeses.
