HVE Level 3-certified estate in Beine, Marine Descombe harvests 40-year-old Chardonnay from Kimmeridgian clay-limestone soils. Pneumatically pressed, fermented in temperature-controlled stainless steel tanks for 4–6 months, then aged on fine lees — capturing pure chablis minerality.
- Nose: Green apple, lemon, pear, white flowers, and fresh flint — expressive, clean, and classically pure
- Palate: Crisp and round — citrus, green apple, and bright acidity underpinned by beautiful Kimmeridgian chalk minerality
- Finish: Fresh, long, and saline — mineral, focused, and beautifully balanced; drink through 2028
