Domaine Rolet Pere & Fils Macvin du Jura Blanc

The high alcohol content halts fermentation, killing off any yeast and resulting in a naturally sweet "wine" with an alcohol level comparable to that of Port. It is then aged in casks for 22 months, allowing for the development of slight tannins and complementary flavors from the oak. While it is sweet, it doesn’t come across as overly rich, thanks to the naturally high acidity of the base grape. This acidity enhances the sweetness and prevents it from being cloying.
