Johannes Zillinger's 'Revolution' White Solera NV blends 50% Chardonnay, 25% Riesling and 25% Scheurebe, with the Riesling component drawn from a solera system dating to 2013. Chardonnay ferments on skins in amphora, while Scheurebe and Riesling age in barrel and steel, bottled unfined and unfiltered with minimal sulphur.
Lilac, muscat, yellow apple and peach lead the nose, layered with nutty, tobacco and herbal spice. The palate turns spicy and phenolic, distinctly saline and textured, with integrated acidity and a lightly smoky, mineral finish.
