Cantillon Gueuze 2025 is a blend of one-, two- and three-year-old lambic, spontaneously fermented with wild yeast in an open copper coolship, then aged in oak barrels before a natural second fermentation in the bottle, Champagne-style.
Citrus, wood, cellar funk and light lactic acidity lead the nose. The palate balances bright acidity with aged complexity, finishing dry and slightly tannic.
