Crafted by self-taught winemaker Alessandra Divella in Lombardy's Franciacorta hills, 'Dady' is a sparkling wine built entirely from Chardonnay, aged in second- and third-passage barriques before 42 months on lees—a patient, oxidative regime that sets it worlds apart from mainstream prosecco.
Zero dosage lets the fruit speak: red apple, dried flowers, hay and honeyed blossom on the nose, with apricot, quince, brioche and chalky minerality on the palate. Fine perlage, real tension, a long, taut finish—structured, serious sparkling wine for the table, not the toast.
