Domaine Pattes Loup Chablis Miss Tardive Vent d'Ange 2022 represents one of the most exciting Chablis wines from Thomas Pico's acclaimed organic estate in Courgis. Founded in 2005 under mentorship from legendary Alice and Olivier de Moor, Pico has established Pattes Loup ("wolf paws") as a rising star in natural Chablis. This entry-level cuvée sources 100% Chardonnay from 55-60+ year-old vines on the highest altitude hillsides near Courgis and Preys. Hand-harvested with rigorous sorting, 40% ferments in concrete eggs and 60% in stainless steel using indigenous yeasts, with no oak and extended lees aging.

Mineral Intensity Meets Vibrant Energy

Deep straw-gold in color, the wine opens with chalk, oyster shell, savory herbs, wild white blossoms, and honeysuckle. Intense and full-bodied yet crackling with energy, the palate delivers Meyer lemon, green apple, pear, ripe grapefruit, dried honey, wet rock, and briny minerality.
