The wine presents vibrant notes of lemon zest, peach, and saline minerals, complemented by a touch of yogurt and butter, with an earthy, slightly oily texture due to its concentration. As it warms, hints of elderflower emerge. It features dense acidity and good concentration overall. Winemaking involves manual harvesting and fermentation with indigenous yeasts, with the wine aged for two years—80% in old barrels and 20% in cement eggs. It is bottled without filtration or fining and only minimal sulfur dioxide is added.
