Chablis-Inspired Cool Climate Mastery
Hand-harvested Clone 95 Chardonnay undergoes wild fermentation in a bespoke 25-hectolitre French oak botti (Italian large barrel), maturing on lees for 15 months before unfiltered bottling. Expect vivid layers of grapefruit, white florals, and toasted hazelnut with briny oyster-shell minerality and vibrant acidity.
